Did You Know?

Raw kale has a very mild flavor.  In fact, it's almost tasteless, and that's a good thing!

This lack of flavor makes kale the perfect addition to smoothies and sandwiches.

You can incorporate it into your favorite recipes without fear of it altering their taste.

Kale is a nutritional powerhouse.  These beautiful, ruffled greens offer you an easy way to boost your vitamin A, K, and calcium levels.

One cup of kale provides twice the daily requirement for vitamin C and beta carotene (a vitamin A precursor), 5mg of vitamin E, 30mcg of folate, 135mg of plant-based calcium (more easily assimilated than the forms found in supplements), 2mg of plant-based iron (the most bioavailable type), 450mg of blood-pressure-regulating potassium, 1 gram of fiber, and just 50 calories.

This curly-headed cousin of the collard green contains cancer-fighting bioflavinoids in abundance, and chemical compounds called indoles which are believed to mitigate the cancer-inducing influence of excess estrogen, and stimulate the production of beneficial enzymes.

Add ease of preparation to these myriad benefits, and this is an offer you won't want to refuse.

Kale greens are tender and easy to clean (just rinse them quickly under running water).

For maximum tenderness, cut out the stems and only use the leaves.

The stems are perfectly edible, they are just tougher to chew.

Raw Kale Tip:

For prettier and more nutritious sandwiches, use the young, tender leaves of kale as a substitute for lettuce.

Kale Smoothie Tips

  1. The addition of kale (or any green) to a smoothie will tend to create a chunky texture.  To minimize this, use just a cup of chopped leaves in a whole blender full of smoothie.
  2. Also, be sure to use at least one of the fruits that make a smoothie smooth: bananas, mango, etc.  It is the ratio of these to the chunky ingredients that determine the texture of the finished drink.
